Can you share a happy fish and chip memory?
I’ve always liked fish and chips from the time I was a young kid. I love fishing and I started going fishing with my dad as a young fella, age 6, so I always wanted to do something with fish.
Where have you eaten the best fish and chips?
The freshness, pride in what we do and the long hours mean I’d have to say our place.
In your business, what do you consider to be the best fish to use for fish & chips?
Whiting because it’s a sweet fish.
And how do customers enjoy it?
Battered is the most popular and usually with chips, salt and lemon.
Do you have a personal favourite?
A few times I’ve been to Melbourne and Gummy Shark is pretty popular there and I like that.
What Australian wine (or other beverage) would you match with your fish & chips?
A beer, corona with lemon. It’s what I have when we go on holiday.
How long have you been making/serving fish & chips?
Nearly 10 years.
What value does winning the award have for you?
It just makes the 90 hours a week worthwhile along with all that time away from your family. It turns all that hard work into a privilege. It’s particularly valuable because it comes from our customers.
I think that the amount of fish we sell has picked up with this award, particularly with the Channel 9 coverage we’ve had. We have always been equally known for our hamburgers, but the amount of fish we sell has definitely increased since the award has been going on.
Do you think it can help to promote the consumption of seafood in Australia?
For sure, just through the publicity. Seafood seems to be popular but things like this do help and open consumers have eyes.
